Carrot oat bran muffins

Ingredients (makes 12 servings - 2 ounces per serving)

  • 1 teaspoon lemongrass – chopped fine
  • 1 teaspoon ginger root – grated
  • Zest of half a lemon
  • Juice of ½ a lemon
  • Zest of ½ a lime
  • Juice of 1 lime
  • ½ teaspoon orange zest
  • ½ tablespoon extra-virgin olive oil
  • 1 whole green bell pepper – seeded and small diced
  • ½ mango – seeded, skinned, and small diced
  • 1 cup of small diced seedless cucumber
  • 1 cup diced semi ripe pineapple – skinned and small diced
  • ½ small red onion – minced
  • ¼ teaspoon kosher salt
  • 1/8 teaspoon cayenne pepper
  • 2 tablespoons agave nectar
  • ¼ teaspoon coarse ground black pepper
  • 4 mint leaves – rinsed and chopped
  • 6 cilantro stems with leaves – rinsed and chopped

Directions

  1. In a mixing bowl add all ingredients except for the avocado. Mix ingredients well with a spoon or plastic kitchen spatula. Once all the ingredients have been mixed well, add the medium diced avocado and fold into the mixture.
  2. Let sit in the refrigerator for at least 15 minutes and serve over protein of choice.
